Greens - More Than Just For Popeye!

We’re often inundated with ads for “super foods.” It seems that every week a certain type of food is lumped into this category! Some less deserving than others.

However, there is a certain category of foods that is not trendy and will never lose its classification as a true “super food”: leafy greens. Kale, collards, spinach, bok choi, arugula… these greens are bursting in Vitamins A, C, E, and K, anti-oxidants, folate, and more.

Certain studies have shown that eating 2 to 3 servings of green leafy vegetables per week may lower the risk of several types of cancer and decrease your risk of heart disease. Also, a recent study published in the magazine Neurology showed that eating a diet rich in leafy greens is linked to a sharper memory.

In short – the more greens the better. It is pretty difficult to eat too many greens. Try to get a good variety into your diet because the various types have different benefits. Collards beat kale when it comes to calcium!

Try to add greens to your diet as often as possible. Salad for breakfast anyone???
